Is that my coworker with whom I am sharing my CSA box detests beets so I can have them all. Because OH MY GOD, these are the best beets I've EVER eaten.

I've actually never had beets and am DYING to try some.
Beets are the best! My sister doesn't understand this - dang, I wish I shared a CSA box with her.
I think most people don't like the earthiness. It's hard to eat something that smells and kinda tastes like dirt.
This was the first time I've ever cooked beets on my own. I oven-roasted them with extra-virgin olive oil, salt, pepper and rosemary. They were lovely and the earthiness is actually toned waaaaaaaaaay down.
